Homemade chicken nuggets and oven baked fries

My little man LOVES chicken nuggets.....but the store bought ones are on probably 50% chicken and who knows what else. Here's a super easy yummy recipe for chicken nuggets and also one for oven baked french fries.

CHICKEN NUGGETS
3 TBSP Butter (You can also use olive oil or a mixture of butter and oil)
2 tsp Worcestershire sauce
2 Large chicken breasts (about 2 LBS)
50 wheat crackers, finely crushed
1/3 cup grated Parmesan cheese
I also add pepper, parsley, paprika, and garlic powder to the mixture (approx. 1/2 tsp of each)












In a bowl stir together butter (or oil) and Worcestershire sauce. Add chicken and toss to coat chicken. In a plastic bag (I just use a food processor) stir together crushed crackers,  Parmesan cheese, and other spices if you want to add those. In a bowl roll the coated chicken in the cracker mixture. Place breaded chicken on a cookie sheet. Bake @450 for 7-9 minutes.

Oven Baked French Fries
5 LBS potatoes (pealed and cut into 1/2 inch square strips)
1/4 cup olive oil
1/4 cup water
-Stir the sliced potatoes into the oil/water mixture, coat throughly.












Mix together (i use a processor to get everything nice and fine):
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt and pepper
1/4 cup grated Parmesan cheese
1/4 cup Italian bread crumbs
1/4 tsp paprika
-Blend together in the processor until very fine. When mixed all together pour dry mixture over the potatoes and mix all together. Cover a cookie sheet with foil and lay fries out on lined cookie sheet. Bake @400 for 30-35 minutes (it just took 30 minutes for me)

ENJOY!!! Your kids will love it. I know that mine does. They are much healthier and tastier than the store bought ones.

  1. I am excited to try this..seems much healthier than store bought nuggets. I know this is a strange question but do you think you could make a bunch of the nuggets up and cook them and then freeze them? Like buying store frozen nuggets but homemade? And then you pull them out when you want to prepare and reheat them?? I know strange question but what do you think??

  2. I would think that you could make them and freeze them. They reheat just fine....so i would think that reheating from being frozen would work great too. You would just have to make sure that you froze then in an air tight container so that they don't dry out.

    Let me know how freezing them works!

  4. These were super yummy, everybody! And easy to make, and good for you all in one! I am lucky to have her a sis in law and get to eat her food more often than she would like me to, I am sure. ;) There were tons, but they were gone in a flash! Be sure to try them out, it is well worth it!

  5. I love REAL oven baked fries but they often take so long to bake that it is easier to do store-bought or cook some potatoes on the stovetop instead (or pasta, etc) but kudos to you for sticking with it! Have you done sweet potato fries?

  6. @jill-no i havnt tried sweet potato fries...i really want to though. I'm sure that they would turn out gteat!

    @Megan-You just use the water (and oil) to help the seasoning stick to the uncooked potato
