My little man LOVES chicken nuggets.....but the store bought ones are on probably 50% chicken and who knows what else. Here's a super easy yummy recipe for chicken nuggets and also one for oven baked french fries.
CHICKEN NUGGETS
3 TBSP Butter (You can also use olive oil or a mixture of butter and oil)
2 tsp Worcestershire sauce
2 Large chicken breasts (about 2 LBS)
50 wheat crackers, finely crushed
1/3 cup grated Parmesan cheese
I also add pepper, parsley, paprika, and garlic powder to the mixture (approx. 1/2 tsp of each)
In a bowl stir together butter (or oil) and Worcestershire sauce. Add chicken and toss to coat chicken. In a plastic bag (I just use a food processor) stir together crushed crackers, Parmesan cheese, and other spices if you want to add those. In a bowl roll the coated chicken in the cracker mixture. Place breaded chicken on a cookie sheet. Bake @450 for 7-9 minutes.
Oven Baked French Fries
5 LBS potatoes (pealed and cut into 1/2 inch square strips)
1/4 cup olive oil
1/4 cup water
-Stir the sliced potatoes into the oil/water mixture, coat thoroughly.
Mix together (i use a processor to get everything nice and fine):
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt and pepper
1/4 cup grated Parmesan cheese
1/4 cup Italian bread crumbs
1/4 tsp paprika
-Blend together in the processor until very fine. When mixed all together pour dry mixture over the potatoes and mix all together. Cover a cookie sheet with foil and lay fries out on lined cookie sheet. Bake @400 for 30-35 minutes (it just took 30 minutes for me)
ENJOY!!! Your kids will love it. I know that mine do. They are much healthier and tastier than the store bought ones.
